Lakeshore Caf to reopen under new owners

It’s definitely a family affair for Roxanne Thomas and her children, who have bought Lakeshore Café and are reopening it next week.

Roxanne and her children, Alexis and Chris, will keep most of the breakfast and lunch menu familiar to Evergreen residents, plus they will be adding a few surprises. They will add some healthier options, plus Roxanne will be cooking her favorite recipes: biscuits and gravy and corned beef hash.

The name will change slightly to Rox’s Lakeshore Café, and the business will remain in the Lakepoint Center. Roxanne and Chris will do the cooking, and Alexis will be serving.

They are putting in a counter and booths, and remodeling the kitchen area. Carpet will be installed on the floors.

Roxanne is no stranger to Evergreen restaurants, having owned The Prospector, which was a precursor to Black Hat Cattle Co. in Kittredge. She also managed Keys on the Green and the Whippletree, among others.

Roxanne bought the restaurant from Brad Nelson, and she said he sold it because he had just become tired of the restaurant life.

“I thought I had restaurants out of my system,” Roxanne said. “But this opportunity came up, and here I am.”
