Eddie “Champ” Wallace died on April 3, 2008, in Alhambra, Calif. He was 87. A memorial service was held in Alhambra on April 26, 2008.
“Champ” Wallace was born on May 25, 1920, in Gilmer, Texas. He served in the U.S. Army Air Corps in San Antonio during World War II. He served as a cook and learned the trade that allowed him to become a wonderful chef at many restaurants in Southern California.
“Champ” also was an employee of Uniroyal Tire Co. for almost 30 years.
